Fireball Apple Cider

 

Being born and raised in Boston, I hated the winters growing up. But ever since moving to California, I find myself more and more missing something I never thought I’d miss… snow!

Every year, I make it a habit to plan a winter trip. Sometimes I go back home for Thanksgiving or Christmas, other times I rent a cabin in Big Bear for the weekend. I always make sure to reserve a cabin with a fireplace, because there’s nothing I love more than curling up in front of the fire with a blanket, a book, and a warm drink.

After toying around with many spiked cocoas, hot toddys and ciders, this fireball apple cider is definitely my winter drink of choice. I made it for the first time last Thanksgiving, as my family and I were hanging around the fire in Cape Cod, and the warm apple cinnamon flavor was the perfect way to end the day. (And don’t worry ladies – it doesn’t taste anything like whiskey!)

Fireball Apple Cider

Ingredients
  • 1 cup apple cider
  • ¼ cup Fireball cinnamon whiskey
  • Optional: 1 slice of apple, 1 cinnamon stick
Instructions
  1. Heat apple cider in a saucepan or microwave, then add to coffee mug or serving glass.
  2. Add Fireball whiskey and stir.
  3. Optional: Add 1 cinnamon stick and garnish with apple slice.

No-Bake Protein Bites

  These little bite-sized protein balls are not only raw and vegan, but they only take 10 minutes to make (no baking required!) and they’re so tasty! I just made them for the first time a few weeks ago and I’ve been hooked ever since. They’re a great pre-workout boost since they’re loaded with protein from oats, peanut butter and chia seeds. They’re also a handy  on the go snack, whether you bring them in the car or for an afternoon treat at work.  No-Bake Protein Bites Ingredients ¾ cup dry old-fashioned oats ¼ cup shredded coconut ¼ cup creamy peanut butter ¼ cup semi-sweet or dairy-free chocolate chips 2 tbsp pure maple syrup or agave nectar 1 tbsp chia seeds 1 tsp vanilla extract Instructions Soak chia seeds in 2 tbsp of water for 1 minute until they have a jelly-like substance. Stir all ingredients together in a mixing bowl. Cover and store in refrigerator for 10 minutes. Remove from fridge and roll mix into 1-2 inch balls with your hands.

3-Ingredient Lentil Dip

  The first time I tried this recipe, I didn’t even know what lentils were. A friend of mine served it at a get-together, and I couldn’t stop eating it. This was also the recipe that made me fall in love with goat cheese. Most lentil dip recipes use feta cheese, but my friend had used the crumbled goat cheese from Trader Joe’s. Ever since then, I’ve been hooked. I tend to replace feta in a lot of my recipes with goat cheese because I personally like it better. But you’re welcome to use feta if you prefer. You can serve this hot or cold, but I like to heat it up first. I also like to serve it with pita chips, but for a gluten free option, you can also make your own chips with brown rice tortillas. Just sprinkle some olive oil and salt on the tortillas, slice them into pieces, and bake them at 350 until they turn golden brown.
