Mango Sticky Rice

  For years, I was so excited to go out for Thai food because Thai restaurants were the only place I could order mango sticky rice for dessert. For some reason, it never occurred to me to make my own… and I never realized how easy it is! For most mango sticky rice recipes, you have to soak the rice overnight, but if I’m making this dish, I want to eat it right away! So for this recipe, you can just cook the rice for 25 minutes and then you’re good to go. Sticky rice can be hard to find in most grocery stores, so I use sushi rice, which is very similar and a perfect substitute for this recipe. You can also use white rice, but the cooking times will vary. Spicy Chai Hot Chocolate

  I’m always looking for healthy coffee alternatives to kick off my day. Generally, most mornings I have a cup of flavored coffee with a splash of coconut milk, but it’s nice to switch it up once in a while. Recently, I read an article with lots of fun hot chocolate recipes – one was a chai hot cocoa, one was a metabolism boosting hot cocoa with cayenne pepper, and one was a superfood hot cocoa with cacao powder. So I decided to combine all three and… voila! Spicy Chai Hot Chocolate! I love chai, and it pairs perfectly with the rich chocolate flavor. The spicy kick of the cayenne pepper adds a nice metabolism boost, but of course you’re welcome to omit it if you don’t like spice. And cacao is packed with antioxidants and phenylethylamine, which is known to increase blood flow in the brain, make you more focused, and elevate your mood. Strawberry Banana Crepes

  These strawberry banana crepes are topped with an easy, dairy-free, 5-ingredient Nutella sauce. Normally, Nutella is made with hazelnuts, but I used peanut butter in this recipe because hazelnut butter isn’t sold in most grocery stores. And of course, you’re welcome to use your favorite fruit of choice if you prefer a different fruit over strawberries or bananas. Strawberry Banana Crepes with "Nutella" Ingredients For crepes: 1 tortilla of choice (I use Mission low-carb tortillas) 1 banana, sliced 4 strawberries, sliced For Nutella: 1 ½ tbsp cocoa or cacao powder 1 ½ tbsp coconut oil, melted 1 ½ tbsp creamy peanut butter, softened 1 tbsp pure maple syrup ½ tsp vanilla extract Instructions Prepare the Nutella sauce by stirring all Nutella ingredients in a bowl until combined. Electric Lemonade Cocktail

  I have a thing for blue drinks. Or really, any drink that looks pretty. My go-to cocktail tends to be flavored vodka and soda water, since it’s the healthiest low calorie, sugar-free option. But after a while, a plain ole transparent drink tends to get a little boring. So I have to improvise. I have so many cocktails on my to-do list that I don’t even know where to start. I’m that girl who shows up to parties with a giant bag of fruit and booze and gets to work, whipping up drinks for everyone. Which is awesome because I’m always invited back. For this electric lemonade cocktail, I primarily add the blue curacao for looks, as it’s typically loaded with sugar. The drink should mainly consist of vodka, soda water and lemon juice. Blue Electric Lemonade Cocktail Ingredients 1 cup lemon flavored seltzer water ¼ cup fresh squeezed lemon juice 1 tbsp Blue Curacao or agave nectar 1 shot citrus flavored vodka (1.5 oz.) 1 cup ice Slice of lemon, for garnish Instructions Juice lemon and pour i
